Wyoming Culinary Institute Now Open For The Year

(Sheridan, Wyo.) The Wyoming Culinary Institute is now open for lunch and dinner on Thursdays and Fridays from 11:30 a.m. to 2 p.m. and 5 p.m. to 8 p.m.
For now, the restaurant will strictly feature Italian food. Enthusiasts of other food varieties need not despair, however, as the restaurant will focus on other cuisine later in the year.
Chef R.J. Rogers, an instructor at the institute, said that the program’s dishes provide an experience that Sheridan residents don’t usually get.
“What we offer through our program is they get to come down and sample something that they can’t normally get in Wyoming,” Rogers said. “So we have our little niche in Sheridan with our restaurant, and we’re able to do seafood and things that aren’t common around Sheridan.”
Preparing food at WCI is a program requirement for student in the culinary program. Working at the institute allows students to gain real-world experience working at a fully functioning restaurant and get feedback from community members.
“Our students are responsible for developing all the menu items, so they really get a trial run at being chefs before they graduate,” said Rogers. “That means they go into the workforce much more prepared and confident than if they didn’t have this experience.”
The 2018/2019 menu rotation will be:
Sept. 6 – Oct. 19: Classical Italian
Oct. 25 – Dec. 7: International Cuisine
Jan. 31 – March 22, 2019: Classical French Cuisine
April 4 – May 3, 2019: North American Cuisine
